The way the website mp3 has it, it's pronounced like an ee, as in seek, or sleep.

I haven't listened to the mp3, but the website says:
"sigur rós si-ur rose (the i is like the i in "hit". "rose" is said very quickly)"

i as in "hit", that's what it says.

si-ur ros, the i is like in "hit" and the "ros" is pronounced very quickly.
