So guys, i'm getting back into PM, and am looking for albums. I really like the faster stuff with a clear speed metal influence, but still super epic :).

Have you heard Firewind's Forged by Fire? I think it meets your demands. Also check Kamelot if you haven't. My favorite album by them would be The Fourth Legacy, but around here the Black Halo is usually pinned for best.

I can say that both of the Kamelot albums are awesome, quality Power Metal.

Anyone got any tips for some good Symphonic Power Metal? Other than Nightwish and Therion?

Check out Running Wild's Black Hand Inn and Savatage's Hall of the Mountain King.
