Victorinox is my favourite, they are kind of standard but cheap, light and keep sharp for ages. I have a $250 Global chef's knife which is awesome but I don't use it nearly as much, it's very heavy and like using a meat cleaver

I got one of those new henckel knives that don't have a safety on them so you can sharpen the whole blade
they're balanced differently, feels weird but fields good.
