Hold the second fret, pluck the g string and tune down to G

No, that would make it Drop B. Hold the second fret and pluck the D string, the tuner should read E. Now tune it down and pluck the a string again, still holding the second fret, tune it until it says D.

By the way, for the A string, you can just pluck the open string and tune it to G because the tuner has a G note on it.

You can just use a chromatic tuner. Works for me... Or it did the one time I messed about with tunings in a serious way. I just play in standard or Eb, or occasionally drop D now.

Most tuners only have EADGBE.

Then just strike the D string, now tuned down to C, and just tune it to that.
