Neapolitan pizza is from Naples, Italy, and it consists of very thin crispy crust with fresh homemade tomato sauce made simply from the grinding up of tomatoes with little extraneous spicing, with mozzarella balls melted to make circular patches of cheese, all sprinkled with heaping layers of oregeno and basil. There are other varieties, but this one is my favorite. It's known as the "margherita" Neapolitan pizza. Pretty simple, but very effective: the freshness and quality of the spices, sauce and cheese are key to the eventual taste.
