I haven't noticed that making any significant difference, maybe it would work better with a lighter/oil based sauce rather than tomato? |

This one has no tomato, it's fresh cream based, but yeah cook til al dente, strain the water, chuck it all back in the pot with the sauce and simmer for another 2 mins. Sauce keeps heat better than the actual pasta, which is why it continues to cook it.

Hope it will be. Garlic is the secret I reckon. I fried the mushies and the chorizo slices in oil and garlic paste before adding it to the sauce to reduce. Reckon it makes it awesome.

yeah I know the technique, I just didn't notice any real difference in flavor as opposed to just pouring the sauce on top the pasta is supposed to soak up the sauce a little cause it's still cooking right? |
I think it's more about getting it cooked consistently than improving the taste.

hmm I'm pretty sure I heard that if you take the pasta out before it's done (IE still slightly too al dente) it will continue to absorb any liquid you put it in therefore putting it in sauce would mean it's absorbing the flavor.
