I think it's pointless unless you want to use it as an insult, the quintessential dad-rock band for me would be The Stereophonics & they're not even that old. I suppose it's crappy, middle-of-the-road, soft rock. A dad aged example (from my perspective) would maybe be Status Quo.
Again, just so we're clear I'm throwing around insults, it's not a helpful description at all in terms of actually describing music.

It's simply music that your dad listens to. Sometimes regarded as safe, non confrontational. It was a pejorative term to describe music that was 'past it' and not as 'youthful' as what was happening in the scene.
It's now died a death because the reality is old music rocks harder, louder and with more balls than any new pretenders.
