well i told her i wasn't gonna do it straight up and she got mad and stopped talking

but maybe she'll blubber about it tomorrow on the phone and i'll feel bad

i doubt it though cuz im so much more relaxed now, not sure there's anything that would make me agree to do it again

it conducts heat better but that's not necessarily a good thing

i read some stuff on it ages ago which went into some detail but i can't remember it, the gist of it was that it's theoretically better for small quantities of heat sensitive stuff like emulsified/gelled mixtures like cheese or chocolate or hollandaise or whatever but it doesn't make a big difference for the most part

copper bowls prevent overwhipping of egg whites the same way acid does

well yeah that's what i mean

it conducts heat better so it will come through faster but only (mostly) directly over the burner instead of being spread evenly

i have my thermostat at 76 degrees all year. always nice in my place.

if i get a bit hot from outside activity, i turn on one of our many ceiling fans I had installed in our house. very nice

it was 74, but my wife complained it was cold. her body temperature is like just shy of 97 all the time so she gets cold easily.

it was sort of a compromise
