Remodeling a neck?

I've got this Les Paul Gothic (Gibby) with a fat '59 neck, feels nice and all, but I can't help but feel it's slowing me down a bit.

Now, if you compare the '59 neck profile to the 60's profile (as most of you know, is much slimmer), most likely, the truss rod will be deeper set in the '59 (what with the neck having more wood to work with), but supposing the difference is not that big, do you think it would be possible to hand the guitar over to a craftsman to have it slimmed down? Maybe just a 5th of an inch or so?
