Miles Davis - Kind of Blue
John Coltrane - A Love Supreme (Arguable one of the best Jazz recordings in existance)
Charles Mingus - The Black Saint and The Sinner Lady

There are tonnes more - but those three albums are a must and an excellent introduction into the wonderful world of Jazz.
