Cornmeal and Railroad Earth are really where it's at if you like bluegrass with some jams. Both of them can play bluegrass as well as anyone but can go way outside of the bluegrass genre comfortably too.
Others:
Avett Brothers (not bluegrass, but have banjos and stuff)
Blueground Undergrass
Bruce Hornsby & Ricky Scaggs
David Grisman & Jerry Garcia
David Grisman Quintet
Doc Watson
Flying Burrito Brothers/ late sixties Byrds
Flatt & Scruggs
Great American String Band
Greensky Bluegrass
Old And In The Way
Many more.

The Del McCoury Band is pretty good.
Diamond Rio is more straight up country I guess....but have some strong bluegrass elements.
I need to get some more bluegrass myself tbh.

John 5. Doesnt have banjo's and all that stuff, but he's an instrumental artist and incorperates bluegrass into his playing. Really interesting. You should check it out!
