I am using this audio interface:

I would like to know if it's possible to use both inputs simultaneously, ex. to record voice and guitar at once, stereo mic'ing, etc. I have Windows XP sp3 and Adobe Audition 3. It does come with Cubase LE 4 and I could use that if necessary but I just prefer Audition. Thanks

Yes you can it just will come out left channel one right channel two I'm not sure exactly which would be which but you can figure that one out then have "Track 1" input left "Track 2" right and with this it wouldn't matter which you chose to be left or right or you can do stereo and get both channels on one track. Cubase LE 4 sucks personally I hate it came with my inspire and thats not far off just mine has the internal control panel instead of an external a little easier not much... Did you read the manual that came with it, it may delve deeper into that but as far as I know yes you can use them simultaneously
