Prince of Persia the Sands Of Time had a pretty cool soundtrack as well. The way there was a modern rock influence on the middle eastern sounds was pretty cool sounding, it was good because it was just a touch.

Vice City had the best soundtrack for a GTA game. I loved the music in FF7 and Legacy of Kain Defiance. All of the MGS games had great music as well.
