I've heard many a good thing about them, and I do believe I want to try them out.

Any good recommendations for where I should start?

Awesome band. Nice gravely vocals. I would start with the song Kiss the Bottle, simply for how epic it is. As far as albums go, Bivouac is a good place to start for their older more raw stuff but Dear You is slightly more listener friendly.
