...Don't emo bands stay together for more than 2 records?
They get together, stay for a year and a half or two years, release a demo, an LP, and a full length (if we're lucky) and then break up.
What the hell?

Because then they realize its time to break up and just change members with other bands to get new bands formed.
Not many (good) emo bands in the last couple of years has been formed without members of other emo bands.

But it is true, for the most part everyone says they leave cause they pursue other interests. Other bands, schooling, a career in something else. Whatever, if it floats their boat.

I'm moving to NYC. I'll actually be in NYC today for like an hour on my way down to Philly.

They are carrying on the tradition of their hardcore forefathers but instead of releasing a 7" and then breaking up they release a bit more.

Not true. Think of the whole San Diego scene, and the late 90s bands from your area, quite a few of those I would venture to say are legendary.

It's all part of a never ending emo cycle. Emo bands break up. Fans of those emo bands get upset and write songs about their favorite bands breaking up. They put out a cr00sh split 7". They break up. Their small fanbase then writes angsty songs about them breaking up.

Usurp Synapse along with a ton of other bands with Saetia closing were putting on a show and for the entirety of the concert, almost every single person there sat outside in a group talking, ignoring all the bands playing 'cause they were only interested in seeing Saetia. Usurp Synapse played their set and IMMEDIATELY after their last song ended the singer dropped his mic and ran out the front door as fast as he could. He ran right up to all the kids sitting around gossiping and said
"Hey guys, sorry I'm late, I was inside playing a show with my band. What'd I miss?"

Seriously, the five songs are incredible.
Today in Philosophy class, I developed a theory that the five songs can be arranged to match the Kubler-Ross stages of death, but I got as far as matching "Countless Rooftops" to Denial and "I Don't Imagine You And I Anymore" to Anger, but that's as far as I got.
