Recording Keyboard

How to people go about recording keyboards?
Im thinking about getting one to play around with but i think im going to want to record with it too.

Well, I use them as MIDI controllers myself, but I guess you can use a line out and go straight in.

I want to mess around with MIDI's that would be really cool to do with a keyboard. I was wondering though, how do you get more midi sounds?
Like garageband comes with some.... but how can i get more different sounds?
