So I've got this old archtop acoustic that is a lot of fun. I thought it might sound good electrified. But it turns out most pickups are too tall to fit between the strings and the soundboard.

I've got about 0.4" of clearance. I found some humbuckers that are designed just for this (they clip onto the fretboard) but I really wanted to go single-coil. Anybody have any ideas here?
It has crossed my mind to wind my own pickup. Can anyone see any problem with winding a pickup that is really shallow and wide? Obviously it would have a bit more resistance for the same number of turns as a normally-proportioned pickup but I don't really know what that would do for the sound.
