I can make nice melodies and sing in key easily over most backings. My singing technique is right on but my voice seems just too weak. I'm 19 years old and I hit puberty pretty late (stopped growing only this past year ). Is there any possibility that my voice might gain power as I get older?

voices are always changing i think.
so check the key of a song that you can sing well and then look at the key to the song that your wanting to sing stronger etc..
just a tone in the wrong direction can change your voice so be wary of the key each song is in. ok
Also diction plays a major part in gaining a strong vocal.
The vocal doesn't have to be loud to be strong. this is where diction comes into play.
it's a bit like when someone with a strong accent begins to sing and suddenly they lose the accent as they burst into song.
breathing is also notorious for producing a weak sounding vocal. you'd be suprised at how many forget to breath in the correct place whilst singing. so check that also. have the lyrics on some paper and put a mark over the places where u think you could take in some air and deliberately stick to those marks and see if the vocal changes because of the reminders to breath.
when recording the vocal you don't have to sing the song it's entire length in one take. you can take as many breaks as you like so try that also and things should improve.
