I need songs that are like quiet and then burst out while going at a steady pase. For example: Blink 182- Stay Together For the Kids.

Start quiet and then go faster at a steady pace?

Ummm...

A lot of Opeth stuff switches between quiet and loud, but there's also time sig and tempo changes so bah to that.

Really, I dunno, man.

Two of my favorite albums for the use of dynamics:
Thrice - Vheissu
Noise Ratchet - Till We Have Faces

Look into both.

Our Time is Running Out - Muse comes to mind. The intro is mildy quiet and it really "bursts out"

I suppose Jeff Buckley's So Real could count actually too, since the verse groove is very soft and makes good use of dynamics, whereas the chorus features a hard and 'sludgy' groove.
