What does it mean to 'sing with an open throat'?
And are there any exercises to help open the throat?

sing using the diaphraghm, practice scales, proper posture

When you sing with a closed throat, you're ... well... closing your throat; choaking the air. This can cause damage in the long and short term, and it's a vicious circle where, the more you think "hmm am I clenching my throat?", the more you seem to do it.
Instead of regulating the air flow with your throat, you should push it with your diaphragm. Check out http://www.musicianforums.com/forums/showthread.php?t=423937. There are loads of great exercises in there for helping you to utilise your diaphragm better :thumb:.
