I'm looking for recommendations of good soul to listen to. I'm liking Nina Simone a lot, even if she's across the board, and wanted to know if anyone in here can tell me who's worth listening to (besides the obvious Billie Holiday, Etta James, and Ella).

Judging from what you mention, Aretha Franklin would probably be your best bet since you've got a ladies slant there. She's got a few amazing albums and a lot of great singles, so maybe try a best of, there'sa few good ones out there. Or if you really want to look into her, go with her live album, Amazing Grace. She sings some gospel standards and stuff. It's a pretty fantastic vocal performance.

The names you've mention seem more like Jazz singers, though. But I guess it's the same ballpark really. Try Dusty Springfield, too. And maybe Bessie Smith if you're feeling for something bluesier.
