I'm guessing pod xt pro or pod pro, with a pedalboard, would both be better then the pod xt live. But what is the difference between them(pod xt pro and pod pro)?
note: i'm not talking about the little pod xt thing, i'm talking about specifically pod xt pro and pod pro. the second is not on the line 6 website, and i know for a fact it's a different thing.

Some would argue the Pro is better at high gain tones, but its not supported/updated any more. The XT is the current incarnation and is regularly updated at the moment.

Depends on your situation in regards to whats better between the Pods. The XT Live is optimized for live use, meaning it would sound better played through an amp than a usual Pod.
Also i believe that 'XT' Pods feature the amp models and effects from Line 6's top line Vetta line of amps.

Thats well and good, but its not relevant.

There is no difference in the two beyond one being designed for Live function. Same outputs.
This has been discussed in depth at the line6 forums. You still cant expect to plug into any amp with the Pod XTLive and have it sound good. You still need to plug direct to PA or into flat response speakers with a poweramp.
