When you use an interface for recording, just say the interface has 8 inputs. Does it record all 8 inputs to a seperate track on the computer?

it depends on the interface. some do. some combine everything into one stereo track.

Yes. interfaces are presented to the computer as a device. In programs such as logic, you can only use one device at a time for input and output. You can assign a different input to each track, and record all the tracks at a time. You can similarly send each track to a different output as well as a stereo mix.
