I have question for you...strictly based on your own opinions and tastes.

If you had some tracks like:

Samples/Horns
Drums
Samples
Guitar Lead 1
Guitar lead 2
Rhythm guitar
bass

How would you pan and mix those levels? (just curious 2 know)

guitar eads either side. drum in stereo if possible. everything else centred.

Samples/Horns - i'd try to set it like that of an orchestra. so horns would be set around 10 o'clock.
Drums - like moaner said, do it in stereo. i like to exagerate the toms. so low tom would be almost as far right as you can go.
Samples - it depends what it is really. sometimes a sweeping effect can work well too
Guitar Lead 1 - 11 o'clock
Guitar lead 2 - 1 o'clock
Rhythm guitar - centre
bass - centre

(when i say x o'clock i mean panned as if it were a clock yeah? eg. 10 is slighly panned left)

If you're doing a mix with bass and guitar, would you want to lower the low on the guitar to make room for the bass?

meh, possibly.

its best to get as close to the sound you want on your amp than mess with the EQ on the program too much.

yeah that would be the best way to pull it off depends on the music.
