I remember this being my intro to Gorguts a few years back and having a sore head.

My mind couldn't comprehend what was going on, like at all.

This is on my list of things to check out but don't think I'm "ready", sounds insane. My theory is if I can get into Death (heard some of Symbolic/like it) & I'm into chaotic heavy music such as Converge & DEP this isn't completely beyond me, one day...

My point is it doesn't sound like the best place to start with Death Metal & I don't want to dismiss it out of ignorance!

Not a bad approach. It just takes a few spins I think. It's a lot to digest.

Death is about 10 times more accessible than this, just a word of warning.

Source - hence waiting before I try this.

Not sure if you (or anyone else) is a fan but would listening to Chaosphere on repeat help? Probably not comparable but it's the most "tech-death like" album I own. Not adverse to it, weirdly enjoyable & hypnotic in places, just hasn't quite clicked as yet.

Meshuggah is easier to get into than this in my opinion. I've never really been able to get into this particular album.

I would recommend checking Gorguts' first two albums if you're interested in this specific band. They're easy to get into if you like death metal.
